Egg Rolls Made Easy

Crispy, savory egg rolls filled with seasoned ground beef or shrimp, cabbage, carrots, and onions, perfect as appetizers or party snacks with a delicious soy sauce flavor.

Ingredients

  • 1 lb ground beef or shrimp
  • 1 large onion, diced
  • 1 medium carrot
  • 1/2 head cabbage
  • 1/4 cup soy sauce
  • salt to taste
  • pepper to taste
  • oil or Crisco shortening
  • 50 egg roll wrappers

Instructions

  1. Fry ground beef, stirring until loose; drain.
  2. Put cooked beef in a large bowl.
  3. If using shrimp, cook, peel, and cut into small pieces.
  4. Shred cabbage and carrot on a cole slaw cutter; add to meat.
  5. Add diced onion, soy sauce, salt, and pepper to taste and mix well.
  6. Let egg roll wraps thaw at room temperature.
  7. Peel one egg roll wrap very slowly so as not to tear.
  8. Fill with about one tablespoon of mixture and wrap, making sure ends are tucked in.
  9. While wrapping about half of the egg rolls, heat oil or Crisco in a skillet over medium heat.
  10. Fry the egg rolls, laying fold side down, until golden brown.
  11. Turn the egg rolls and cook until golden brown on all sides.
  12. Remove and lay on paper towels to drain.
  13. Repeat with remaining egg rolls.
