Ingredients

  • 1 1/2 lb. lean ground beef or chicken
  • 2 c. finely shredded cabbage
  • 1 egg
  • 1/3 c. minced green onion
  • 1/3 c. milk
  • 1/3 c. dry bread crumbs
  • 2 Tbsp. soy sauce
  • 1 c. diced carrots
  • 1 1/2 tsp. grated ginger
  • 2 c. beef broth

Instructions

  1. Mix ground beef or chicken, shredded cabbage, beaten egg, minced green onion, milk, dry bread crumbs, and 1 tablespoon soy sauce. Shape into 1 1/2-inch balls.
  2. Place meatballs on a baking sheet and bake at 450°F for 15 minutes.
  3. In a pan, combine 2 tablespoons meatball drippings (discard the rest), diced carrots, and cook until soft.
  4. Add remaining 1 tablespoon soy sauce, grated ginger, sherry (optional), beef broth, sugar, and dissolved cornstarch mixture; bring to a boil.
  5. Add meatballs to the broth and cook, stirring, until heated through.
  6. Serve over rice if desired.
