Ingredients

  • 1 lb frozen spinach
  • 1 (7 oz) can chopped mushrooms
  • 1 pkg croutons
  • 12 eggs
  • 2 cups milk
  • 1 tsp dry mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup grated Cheddar cheese

Instructions

  1. Thaw the spinach and place it in a 9 x 13-inch Pyrex pan.
  2. Spread the chopped mushrooms on top of the spinach.
  3. Crumble the croutons and sprinkle them over the mushrooms.
  4. Beat the eggs with the dry mustard, salt, and pepper.
  5. Pour the egg mixture over the ingredients in the pan.
  6. Pour the milk over the casserole.
  7. Sprinkle the grated Cheddar cheese on top.
  8. Bake at 350°F for 35 minutes or until done.
