Ingredients

  • 1 small eggplant
  • 4 medium tomatoes
  • 2 medium green peppers
  • 2 medium onions
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. garlic powder
  • 1 (12 oz.) pkg. sharp Cheddar cheese

Instructions

  1. Cut the eggplant into 1/4-inch slices.
  2. Cook the eggplant in a small amount of boiling water for 5 to 10 minutes or until tender. Drain well.
  3. Layer the cooked eggplant slices in a baking dish.
  4. Top with sliced tomatoes, chopped green peppers, and chopped onions.
  5. Sprinkle salt, pepper, and garlic powder over the layers.
  6. Cover with slices of sharp Cheddar cheese.
  7. Bake until the cheese is melted and bubbly, about 10 minutes.
