Eggplant Italiano features golden, breaded eggplant slices layered with rich spaghetti sauce, melted cheeses, offering a comforting, flavorful dish perfect for family dinners and casual gatherings.

Ingredients

  • 1 to 2 medium eggplants
  • flour
  • bread crumbs
  • salt
  • pepper
  • sliced garlic
  • approximately 1 1/2 qt. spaghetti sauce
  • Romano cheese, grated
  • 1/2 lb. Cheddar cheese
  • 1/2 lb. Mozzarella cheese
  • oil for frying
  • 2 to 3 eggs

Instructions

  1. Remove the skin from the eggplants and slice them 1/8 inch thick.
  2. Place the eggplant slices on salted wet paper towels (top and bottom) for 30 minutes.
  3. Rinse the slices under cold water and pat dry.
  4. Dip each slice in flour, then beaten eggs containing garlic, salt, black pepper, and parsley flakes.
  5. Next, dip the slices in bread crumbs.
  6. Brown both sides of the eggplant slices in oil; then cool.
  7. Layer a casserole dish with some spaghetti sauce on the bottom.
  8. Place a layer of eggplant slices over the sauce.
  9. Sprinkle with grated Romano cheese, sliced Cheddar cheese, and sliced Mozzarella cheese.
  10. Repeat layering with remaining eggplant, cheeses, and sauce until used up.
  11. Cover the casserole and bake at 350°F (175°C) for 45 minutes to 1 hour.
  12. Allow it to cool for 30 minutes, then slice and serve.
