Ingredients

  • 6 eggs, separated
  • 2 1/2 cups milk
  • 1/4 pound ham
  • 3 spring onions
  • 1/3 cup oil
  • 1/4 cup flour
  • 1/4 pound crabmeat
  • salt and pepper
  • 1 1/2 tablespoons sherry

Instructions

  1. Beat the egg yolks with 1/2 cup of milk.
  2. Chop the ham and spring onions.
  3. Heat oil in a saucepan and sauté the ham and spring onions over low heat until the onions are transparent.
  4. Stir in the flour and the remaining 2 cups of milk.
  5. Add the crabmeat, salt, and pepper to taste.
  6. Very slowly pour in the egg yolk mixture and the sherry, stirring constantly.
  7. Beat the egg whites until stiff and gently fold into the crabmeat mixture.
  8. Pour the mixture into a well buttered dish.
  9. Bake in a 350°F oven for about an hour until set and golden.
