Ingredients

  • 1 1/2 lb. ground chuck
  • 1 pkg. Chili-O mix
  • 1/2 c. grated cheese
  • 1 pkg. yellow rice
  • 1/2 c. onions
  • Fritos
  • 1 can Cheddar cheese soup
  • 1/2 c. olives
  • 1 c. lettuce
  • 1 can stewed tomatoes
  • 1/3 c. milk

Instructions

  1. Brown ground chuck with spices (salt, pepper, garlic salt), then add canned stewed tomatoes and chili mix. Cook until flavors meld.
  2. Cook yellow rice according to package instructions.
  3. Layer the cooked meat mixture and rice in a casserole dish.
  4. Heat cheddar cheese soup and milk together until smooth.
  5. Pour the cheese sauce over the layered meat and rice.
  6. Top with chopped onions, sliced olives, shredded lettuce, stewed tomatoes, grated cheese, and Fritos.
