Ingredients

  • 1 1/2 lb elk round steak
  • flour
  • pepper
  • 1/4 cup butter or oil
  • 1 cup sliced mushrooms
  • 1/2 cup chopped onion
  • 1 clove garlic
  • 2 cups beef broth

Instructions

  1. Cut the elk round steak into thin strips, similar to French fries.
  2. Roll the elk strips in flour and pepper.
  3. Brown the coated elk in butter or oil in a skillet.
  4. Add sliced mushrooms, chopped onion, and minced garlic to the skillet.
  5. Cook until browned and the vegetables are tender.
  6. Stir in beef broth and cover.
  7. Simmer for 1 hour until the elk is tender.
  8. Stir in sour cream.
  9. Simmer for an additional 5 minutes.
  10. Serve hot over buttered noodles.
