Ingredients

  • 1 lb ground meat
  • 1/4 cup chopped onions
  • 3 eggs
  • 5 1/2 oz canned milk
  • 1 (8 oz) can tomato sauce
  • 1 envelope enchilada mix
  • 1/3 cup ripe olives
  • 2 cups corn chips
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cook ground beef and chopped onions until the beef is cooked and the onions are soft.
  2. Drain excess fat from the meat mixture.
  3. Spread the meat mixture evenly on the bottom of a 10 x 6-inch baking dish.
  4. Beat 2 eggs, canned milk, tomato sauce, and enchilada mix together.
  5. Pour the egg mixture over the meat in the baking dish.
  6. Sprinkle with sliced ripe olives.
  7. Top with corn chips.
  8. Bake in a 350°F oven for 20 to 25 minutes or until the mixture is firm in the center.
  9. Sprinkle shredded Cheddar cheese over the top and return to the oven for an additional 3 to 5 minutes until melted.
