Ingredients

  • 4 c. whole wheat flour
  • 2 Tbsp. wheat germ
  • 2 tsp. baking soda
  • 6 tsp. Ener-g-egg
  • 4 c. mashed banana
  • 1 c. honey
  • 1/2 c. water
  • 2 tsp. vanilla extract
  • 2 c. chopped walnuts
  • 2 c. raisins

Instructions

  1. Preheat oven to 350°.
  2. In a large bowl, combine flour, wheat germ and baking soda.
  3. Set aside.
  4. In blender, combine eggs, banana, honey, water and vanilla.
  5. Pour over dry ingredients; stir in the walnuts and raisins.
  6. Mix well.
  7. Pour into loaf pan.
  8. Bake for 45 to 55 minutes. Let cool for 10 minutes.
