A traditional English fruit teabread packed with dried fruits and subtle spices, perfect for teatime or holiday gatherings, offering moist texture and rich, fruity flavors.

Ingredients

  • 6 oz. raisins
  • 4 oz. sultanas or golden raisins
  • 2 oz. currants
  • 6 oz. soft brown sugar
  • 1/2 pint strained cold black tea
  • 1 egg, beaten
  • 8 oz. plain whole meal flour
  • 1 1/2 tsp. baking powder

Instructions

  1. Put the dried fruit and sugar in a bowl.
  2. Pour the tea over; soak overnight.
  3. Grease and base-line a 2-pint loaf tin.
  4. The next day, add the egg, flour, baking powder and mixed spice to the fruit and tea mixture.
  5. Beat thoroughly with a wooden spoon until all ingredients are evenly combined.
  6. Spoon into the prepared tin; level the surface.
  7. Bake at 350°F (180°C) for about 1 1/4 hours, or until well risen and a skewer inserted in the center comes out clean.
  8. Turn out onto a wire rack to cool.
  9. Serve sliced and spread with butter.
