Ingredients

  • 1 large can crushed pineapple
  • 1/4 c. flour
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 2 Tbsp. lemon juice
  • 1 small carton sour cream
  • 2 egg yolks
  • 1 (9-inch) pie crust, baked

Instructions

  1. Combine pineapple, flour, sugar, salt, lemon juice, and sour cream in a pot.
  2. Cook slowly until thick.
  3. Continue to cook for an additional 2 minutes, then remove from heat.
  4. Beat 2 egg yolks and add a small amount of the mixture to temper the yolks.
  5. Transfer the egg yolk mixture back to the pot of filling.
  6. Cook for an additional 2 minutes.
  7. Pour the filling into the baked 9-inch pie shell and bake with meringue until light brown.
