Ingredients

  • 1 1/2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 5 1/2 cups pecan halves
  • 6 eggs
  • 1/2 cup corn syrup
  • 1 1/2 cups sugar
  • 2 (8 oz.) pitted dates
  • 1 (16 oz.) jar pineapple preserves
  • 4 cups drained maraschino cherries
  • 1/2 cup dark rum

Instructions

  1. Grease large loaf pans and line with foil, then grease again.
  2. Sift flour, baking powder, salt, and sugar into a large mixing bowl.
  3. Add pecan halves, pitted dates, drained maraschino cherries, and pineapple preserves to the dry mixture and mix well.
  4. Beat eggs and dark rum together.
  5. Pour the egg and rum mixture over the dry ingredients and stir until well combined.
  6. Pour the mixture into the prepared loaf pans.
  7. Bake in a 300°F (150°C) oven for 1 hour and 45 minutes.
  8. Cool in the loaf pans for 15 minutes.
  9. Brush the tops with corn syrup while warm.
