Ingredients

  • 1 c. margarine
  • 2 eggs
  • 2 c. applesauce
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 2 c. sugar
  • 4 c. flour
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. nuts

Instructions

  1. Cream margarine, sugar, and eggs together.
  2. Add nuts, baking soda, cinnamon, and salt; blend well.
  3. Add applesauce alternately with flour, mixing after each addition.
  4. Stir in vanilla extract.
  5. Bake at 350°F (175°C) for 15 to 18 minutes, or microwave for about 2 minutes.
  6. Makes approximately 50 muffins or 100 small muffins.
