  • 1 large potato, peeled and cut into large chunks
  • 1 c. orange juice
  • 1 c. water
  • 1 tsp. salt
  • 1/4 tsp. white pepper
  • 1/4 tsp. onion powder
  • 1/4 c. butter or margarine
  • 3/4 c. honey
  • 1 Tbsp. all-purpose flour

Instructions

  1. In a large pot, combine the carrots and all the potatoes.
  2. Add the orange juice, water, salt, white pepper, and onion powder.
  3. Bring to a boil, reduce heat, and add the butter and honey.
  4. Simmer, uncovered, stirring occasionally, for 1 1/2 hours, or until the vegetables are tender.
  5. Continue simmering and sprinkle in the flour, stirring, until slightly thickened, 3 to 5 minutes.

Tips & Substitutions

For added flavor, consider substituting the orange juice with apple cider for a different sweetness. If you're short on time, pre-cut frozen vegetables can be used, but adjust cooking time accordingly. Make sure to stir occasionally to prevent sticking and achieve even cooking. This dish can be made vegan by replacing butter with a plant-based alternative.

Serving Suggestions

Serve this hearty dish as a main course or as a side alongside roasted meats or grilled fish. It pairs beautifully with Chicken In Mustard Cream Sauce for a comforting meal. Garnish with fresh herbs like parsley or thyme for added color and flavor. Consider serving with crusty bread to soak up the delicious sauce.

Storage & Reheating

Leftovers should be cooled and stored in an airtight container in the refrigerator for up to 4 days. To reheat, gently warm in a saucepan on the stove over low heat, adding a splash of water or additional orange juice to maintain moisture. It can also be reheated in the microwave until warmed through.
