Instructions
- Roll the roast in flour and brown it on all sides in oil in a Dutch oven or heavy roaster.
- Add beef broth, red wine, tomato paste, crushed garlic, carrots, celery, and onion to the pot.
- Cook on top of the stove for 1 1/2 hours.
- Add potatoes and cook for an additional 30 minutes or until potatoes are done.
