Ingredients

  • 4 to 5 lb. eye of the round roast
  • 2 Tbsp. tomato paste
  • 2 carrots
  • 1 onion
  • 1 c. red wine
  • 1 clove garlic
  • 2 celery stalks
  • 4 potatoes
  • 1 can beef broth

Instructions

  1. Roll the roast in flour and brown it on all sides in oil in a Dutch oven or heavy roaster.
  2. Add beef broth, red wine, tomato paste, crushed garlic, carrots, celery, and onion to the pot.
  3. Cook on top of the stove for 1 1/2 hours.
  4. Add potatoes and cook for an additional 30 minutes or until potatoes are done.
