Ingredients

  • 12 oz dried kidney beans
  • 4 cups water
  • 1.5 lbs lean ground beef
  • 16 oz canned tomatoes
  • 15 oz canned tomato sauce
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 1 green pepper, chopped
  • 2 carrots, diced
  • 0.25 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 0.5 teaspoon red pepper flakes
  • 8 oz elbow macaroni, cooked
  • splash of red wine

Instructions

  1. Rinse and pick over the dried kidney beans.
  2. Place the beans and water in a stock pot; bring to a boil.
  3. Reduce heat and simmer for 5 minutes.
  4. Cover and let sit for one hour.
  5. Return to heat and simmer for 1 hour longer. Drain, reserving 2 cups of the liquid.
  6. Set aside the beans and liquid.
  7. Brown the ground beef, onions, garlic, carrots, and green pepper in the same pot.
  8. Add the canned tomatoes, tomato sauce, and seasonings (pepper, salt, basil, red pepper flakes).
  9. Return the beans and reserved liquid to the pot.
  10. Cook for 1 hour.
  11. Add the cooked macaroni and a splash of red wine if desired.
  12. Serve hot.
