Ingredients

  • 6 sweet potatoes, cooked and mashed
  • 1 cup canned crushed pineapple
  • 3/4 cup pineapple juice
  • 1/2 stick butter or margarine, melted
  • 1/3 teaspoon ground ginger
  • 1/3 teaspoon cinnamon
  • 1/3 teaspoon ground nutmeg
  • 1 cup walnut pieces
  • 10 marshmallows

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place cooked and mashed sweet potatoes in a bowl.
  3. Add canned crushed pineapple, pineapple juice, melted butter, ground ginger, cinnamon, and nutmeg; blend together.
  4. Mix in walnut pieces and pour the mixture into an oiled baking dish.
  5. Top with marshmallows.
  6. Bake for about 40 minutes until heated through and marshmallows are golden.
