Ingredients

  • 1/2 lb. pork sausage
  • 2 cups shredded hash browns
  • 1 (10 oz.) can diced tomatoes with green chilies, drained
  • 1/2 lb. cheese spread (Velveeta or similar), cut up
  • 6 eggs

Instructions

  1. Brown the pork sausage in a skillet; drain excess fat.
  2. Add shredded hash browns and drained diced tomatoes with green chilies; cook over medium heat for 5 minutes.
  3. Top the mixture with cheese spread and let it melt.
  4. Beat the eggs with 2 tablespoons of water.
  5. Pour the beaten eggs over the ingredients in the skillet.
  6. Cover and reduce heat to low; cook for 10 to 12 minutes or until the eggs are set and cheese is melted.
  7. Uncover and let stand for 5 minutes before cutting into wedges.
