Ingredients

  • 25 plain chocolate wafers
  • 1 1/2 sticks butter
  • 1 1/2 cups powdered sugar
  • 1 egg
  • 1/4 to 1/2 teaspoon bourbon
  • 3/4 pint whipping cream
  • 3/4 tablespoon sugar
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups chopped pecans

Instructions

  1. Grease a 1 1/2-quart rectangular glass dish.
  2. Line the bottom of the dish with approximately 25 plain chocolate wafer crumbs.
  3. Cream together 1 1/2 sticks of butter and 1 1/2 cups of powdered sugar.
  4. Add 1 egg and 1/4 to 1/2 teaspoon of bourbon to the creamed mixture and blend well.
  5. Spread this mixture over the wafer crumbs in the dish.
  6. Cover and refrigerate for one hour.
  7. Whip 3/4 pint of whipping cream with 3/4 tablespoon of sugar until stiff peaks form.
  8. Fold in 1 1/2 teaspoons of vanilla extract into the whipped cream.
  9. Gently fold in 1 1/2 cups of chopped pecans.
  10. Spread the whipped pecan mixture over the butter-sugar layer in the dish.
  11. Cover with additional crushed wafers.
  12. Refrigerate overnight.
  13. Cut into 8 pieces and serve.
