A rich, boozy Christmas cake filled with raisins and pecans, perfect for holiday celebrations and aging to develop deeper flavors over time.

Ingredients

  • 2 cups sugar
  • 1 cup butter
  • 6 egg yolks
  • 1 pound sifted cake flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup whiskey or brandy
  • 1 pound white raisins
  • 1 pound chopped pecans
  • 6 egg whites

Instructions

  1. Cream together butter and sugar.
  2. Beat in egg yolks.
  3. Add dry ingredients, flour, salt, and baking powder alternately with 1/2 cup whiskey.
  4. Stir in white raisins and chopped pecans.
  5. Fold in beaten egg whites.
  6. Turn into a well-greased and sugared Bundt or angel food pan.
  7. Bake in a preheated 300°F oven for approximately 2 hours.
  8. Cool the cake and remove from the pan.
  9. Wrap the cake in cheesecloth wet with additional whiskey.
  10. Wrap in foil and store in a tin, tightly covered.
  11. Aging makes the cake better!
