A creamy, flavorful potato salad with a tangy dressing, fresh herbs, and crunchy vegetables, perfect for picnics, potlucks, or family gatherings.

Ingredients

  • 6 medium potatoes, cooked and cubed
  • 1 small onion, chopped
  • 4 or 5 sprigs parsley
  • 1 Tbsp. vinegar
  • 1/4 c. salad oil
  • 1 pkg. Italian seasoning mix
  • 1 c. mayonnaise
  • 1 c. diced celery
  • 3 hard-boiled eggs, chopped
  • 3 Tbsp. minced dill pickles
  • salt to taste

Instructions

  1. Cook and drain cubed potatoes.
  2. Combine warm potatoes with chopped onion and parsley.
  3. In a small bowl, mix vinegar, salad oil, salt, and pepper.
  4. Pour the dressing over the potatoes and toss lightly with a fork.
  5. Chill for 2 hours or overnight.
  6. Add mayonnaise, diced celery, chopped eggs, and minced dill pickles to the chilled potato mixture.
  7. Mix gently to combine all ingredients.
