Ingredients

  • romaine
  • 4 Tbsp. olive oil
  • 2 cloves fresh garlic
  • 1 tin anchovies
  • 1/2 tsp. prepared mustard
  • 1 tsp. Worcestershire sauce
  • 2 coddled eggs
  • juice from 1 lemon
  • toasted croutons

Instructions

  1. In a very large wooden salad bowl, pour the olive oil.
  2. Crush the cloves of fresh garlic with the back of a spoon in the olive oil.
  3. Mash the anchovies with the garlic and oil, prepared mustard, and Worcestershire sauce.
  4. Bring water to a boil, turn off the heat, and set the eggs in the hot water for 1 minute to coddle.
  5. Break the coddled eggs into the mixture in the bowl and beat with a whisk.
  6. Add the lemon juice and beat again.
  7. When ready to serve, add the romaine lettuce to the bowl.
  8. Sprinkle toasted croutons and Parmesan cheese over the lettuce and toss well.
