Ingredients

  • 2 lbs. beef stew meat, cubed
  • 1 med. green pepper, chopped
  • 1 cup celery, chopped
  • 1 large onion, chopped
  • 8 carrots, sliced in 1/2-inch pieces
  • 4 med. potatoes, small cubes
  • 3/4 lb. fresh green beans
  • 1 8oz. can water chestnuts
  • 1 lb. can whole tomatoes
  • 1 Tbsp. sugar
  • 3 Tbsp. tapioca
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Brown the beef stew meat over medium heat until lightly browned.
  2. Add 1/2 cup water to the pan; stir to loosen any drippings.
  3. Place the browned meat in a large roasting pan.
  4. Mix in all remaining ingredients: chopped green pepper, chopped celery, chopped onion, sliced carrots, small cubes of potatoes, green beans, water chestnuts, whole tomatoes, sugar, tapioca, salt, and pepper.
  5. Cover the roasting pan.
  6. Bake in a 300°F oven for 3 1/2 hours.
