Feather Fowlie is a delicate chicken soup with ham, fresh vegetables, herbs, and a creamy egg finish, perfect for comforting meals or special occasions.

- Skin and joint the chicken. Soak in salted water for 30 minutes. Drain and wash.
- Put the chicken, ham, sliced vegetables, thyme, mace, parsley stalks, and water into a stew pan. Season to taste.
- Simmer gently for 1 1/2 to 2 hours until the chicken is tender. Strain the broth into a clean pan and remove any grease.
- Add the minced meat from the chicken to the broth. Heat for 15 minutes, adding extra stock if necessary.
- Remove the pan from heat. Beat the egg yolks and stir in the cream.
- Carefully add the egg yolk and cream mixture to the soup, stirring gently. Do not boil.
- Test the seasoning and add chopped parsley just before serving. Optionally, serve only the white meat, with the rest as a separate dish.
