Feather Fowlie is a delicate chicken soup with ham, fresh vegetables, herbs, and a creamy egg finish, perfect for comforting meals or special occasions.

Ingredients

  • 1 roasting chicken
  • 1 slice lean ham
  • 1 onion
  • 1 stick celery
  • 1 small carrot
  • 1 Tbsp chopped parsley
  • 1 sprig thyme
  • 1 blade mace
  • 3 pt water
  • 3 egg yolks
  • 2 Tbsp cream
  • salt to taste

Instructions

  1. Skin and joint the chicken. Soak in salted water for 30 minutes. Drain and wash.
  2. Put the chicken, ham, sliced vegetables, thyme, mace, parsley stalks, and water into a stew pan. Season to taste.
  3. Simmer gently for 1 1/2 to 2 hours until the chicken is tender. Strain the broth into a clean pan and remove any grease.
  4. Add the minced meat from the chicken to the broth. Heat for 15 minutes, adding extra stock if necessary.
  5. Remove the pan from heat. Beat the egg yolks and stir in the cream.
  6. Carefully add the egg yolk and cream mixture to the soup, stirring gently. Do not boil.
  7. Test the seasoning and add chopped parsley just before serving. Optionally, serve only the white meat, with the rest as a separate dish.
