Ingredients
- 6 cups canned plum tomatoes ⓘ
- 1 onion, chopped ⓘ
- 1/2 cup green pepper, chopped ⓘ
- 1/2 cup cucumber, chopped ⓘ
- 2 cups tomato juice
- 1/2 teaspoon cumin
- 1 garlic clove, minced ⓘ
- 1 tablespoon salt ⓘ
- freshly ground pepper ⓘ
- 1/4 cup olive oil ⓘ
- 1/4 cup wine vinegar ⓘ
- 1 cup finely chopped tomato-garlic croutons ⓘ
Instructions
- In a blender, puree the canned plum tomatoes, chopped onion, chopped green pepper, and chopped cucumber.
- Add the tomato juice, cumin, minced garlic, salt, and freshly ground pepper.
- Pour the mixture into a bowl, cover, and chill in the refrigerator.
- Before serving, add olive oil and wine vinegar to the chilled soup.
- Serve with side dishes of chopped vegetables and garnish with tomato-garlic croutons.
