Ingredients

  • 6 cups canned plum tomatoes
  • 1 onion, chopped
  • 1/2 cup green pepper, chopped
  • 1/2 cup cucumber, chopped
  • 2 cups tomato juice
  • 1/2 teaspoon cumin
  • 1 garlic clove, minced
  • 1 tablespoon salt
  • freshly ground pepper
  • 1/4 cup olive oil
  • 1/4 cup wine vinegar
  • 1 cup finely chopped tomato-garlic croutons

Instructions

  1. In a blender, puree the canned plum tomatoes, chopped onion, chopped green pepper, and chopped cucumber.
  2. Add the tomato juice, cumin, minced garlic, salt, and freshly ground pepper.
  3. Pour the mixture into a bowl, cover, and chill in the refrigerator.
  4. Before serving, add olive oil and wine vinegar to the chilled soup.
  5. Serve with side dishes of chopped vegetables and garnish with tomato-garlic croutons.
