Ingredients

  • 2 c. flour
  • 1 1/2 c. sugar
  • 1 1/2 tsp. soda
  • 1 1/2 tsp. salt
  • 2 Tbsp. cocoa
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 1/2 tsp. cloves
  • 1/2 c. shortening
  • 1 1/2 c. applesauce
  • 2 eggs
  • 1/2 c. raisins
  • 1/2 c. fruit cake mix
  • dates
  • currants

Instructions

  1. Sift all dry ingredients together in a bowl.
  2. Add shortening and applesauce to the dry mixture.
  3. Beat for 2 minutes at low speed.
  4. Add eggs and beat for another 2 minutes.
  5. Stir in raisins, fruit cake mix, dates, currants (if using), and nuts.
  6. Mix well until all ingredients are combined.
  7. Pour batter into a greased tube pan.
  8. Bake at 350°F for about 1 hour or until done.
  9. Check for doneness and leave it longer if necessary.
