Ingredients
- 2 lb. medium shrimp, cooked and peeled
- 1 medium white onion, cut into bite size pieces ⓘ
- 1 large sweet red pepper, cut into bite size pieces ⓘ
- 1 large green pepper, cut into bite size pieces ⓘ
- 1 (5 oz.) jar stuffed green olives, drained ⓘ
- 1/2 c. olive oil
- 1/4 c. white vinegar ⓘ
- 3/4 tsp. red peppercorns ⓘ
- 1/2 tsp. green peppercorns ⓘ
Instructions
- In a large bowl, combine cooked and peeled shrimp, chopped white onion, sweet red pepper, green pepper, and drained stuffed green olives.
- In a small bowl, whisk together olive oil, white vinegar, red peppercorns, and green peppercorns.
- Pour the dressing over the shrimp mixture and lightly toss until well blended.
- Cover and refrigerate overnight to allow flavors to meld.
- Serve chilled as a festive appetizer.
