Ingredients

  • 2 lb. medium shrimp, cooked and peeled
  • 1 medium white onion, cut into bite size pieces
  • 1 large sweet red pepper, cut into bite size pieces
  • 1 large green pepper, cut into bite size pieces
  • 1 (5 oz.) jar stuffed green olives, drained
  • 1/2 c. olive oil
  • 1/4 c. white vinegar
  • 3/4 tsp. red peppercorns
  • 1/2 tsp. green peppercorns

Instructions

  1. In a large bowl, combine cooked and peeled shrimp, chopped white onion, sweet red pepper, green pepper, and drained stuffed green olives.
  2. In a small bowl, whisk together olive oil, white vinegar, red peppercorns, and green peppercorns.
  3. Pour the dressing over the shrimp mixture and lightly toss until well blended.
  4. Cover and refrigerate overnight to allow flavors to meld.
  5. Serve chilled as a festive appetizer.
