Ingredients

  • 12 Roma tomatoes, peeled and sliced
  • 1 container pesto
  • 1/2 cup chopped green onions
  • 1 to 2 cups crushed croutons
  • 1/2 pound feta cheese, crumbled
  • 1 teaspoon olive oil

Instructions

  1. Coat the bottom of a nonmetal casserole dish with olive oil.
  2. Add peeled and sliced Roma tomatoes, crumbled feta cheese, and pesto to the dish.
  3. Top the mixture with chopped green onions.
  4. Sprinkle crushed croutons over the green onions.
  5. Bake uncovered at 350°F (175°C) for 25 to 35 minutes until heated through and golden on top.
  6. Serve hot.
