Ingredients

  • 2 medium onions
  • 2 jalapeno peppers
  • 4 Tbsp. bacon fat
  • 1 tsp. salt
  • 1 1/2 lb. coarsely ground beef
  • 4 cups Mexican chili beans
  • 2 cans condensed tomato soup
  • 2 Tbsp. chili powder

Instructions

  1. Melt bacon fat in a deep heavy pan; add chopped onions and diced jalapenos and cook over low heat until done, but not browned.
  2. Add ground beef and cook until browned, about 10 minutes.
  3. Drain liquid from beans into a small bowl and save.
  4. Add beans, condensed tomato soup, chili powder, and salt to the beef in the pan.
  5. Stir well to combine all ingredients.
  6. Cover the pan and let the chili cook slowly over low heat for about 30 minutes.
  7. If the chili gets too dry, add the desired amount of bean liquid.
