  2. Remove the cooked vegetables from the skillet and set aside.
  3. In a bowl, combine the eggs and water, then slightly beat them.
  4. Add the beaten eggs to the skillet and cook over medium heat until nearly set.
  5. Return the cooked vegetables to one side of the omelet.
  6. Sprinkle the cheese over the vegetables.
  7. Fold the omelet in half and cook until cheese melts and eggs are fully cooked.
  8. Serve topped with avocado slices and picante sauce.
