Ingredients

  • 6 oz. can chopped mushrooms, drained and finely chopped
  • 3 Tbsp. butter
  • 2 Tbsp. snipped parsley
  • 1 Tbsp. all-purpose flour
  • 6 slices boiled ham
  • 1 slightly beaten egg
  • 1/2 cup all-purpose flour
  • 1/2 cup fine dry bread crumbs
  • 3 Tbsp. shortening

Instructions

  1. Brown the chopped mushrooms in butter with parsley.
  2. Add 1 tablespoon of flour; cook and stir for 2 minutes.
  3. Cool the mushroom mixture.
  4. Spread the cooled mixture on half of each slice of ham.
  5. Fold the other half over to enclose the filling; press to secure.
  6. Dip each ham slice in the beaten egg, then in 1/2 cup flour.
  7. Next, dip into the egg again, then coat with bread crumbs.
  8. Brown the coated schnitzel on both sides in hot shortening.
