A hearty casserole combining seasoned ground beef, melted cheese, and flavorful green chilies layered with crispy corn tortillas, perfect for satisfying family dinners or comfort food cravings.

Ingredients

  • 1 lb. ground beef
  • 1 dozen corn tortillas
  • 1 can chopped green chilies
  • 8 oz. mild Cheddar cheese
  • 1 can cream of mushroom soup
  • 1 medium onion (optional)

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Add the chopped onion (if using) and cook for 2 minutes.
  3. In a bowl, mix the cream of mushroom soup, about 7 ounces (2/3 can) of milk, and chopped green chilies.
  4. Grate the Cheddar cheese.
  5. Cut or tear the corn tortillas into 2-inch squares.
  6. Layer a portion of tortillas in the bottom of an 8-inch square or small oblong ovenproof dish.
  7. Top with 1/3 of the cooked ground beef.
  8. Add 1/3 of the soup mixture and sprinkle with 1/3 of the grated cheese.
  9. Repeat the layering process two more times.
  10. Bake at 350°F (175°C) for about 25 minutes until heated through and bubbly.
