A quick, wholesome fish fillet dinner featuring tender fish, roasted potatoes, and broccoli, topped with lemon-tarragon butter for a flavorful and balanced meal.

Ingredients

  • 3 small new potatoes (approximately 2 oz. each)
  • 1 fresh or frozen (thawed) fish fillet (3 1/2 oz.)
  • 1 tsp. lemon juice
  • 1 c. broccoli flowerets
  • 1 tsp. water
  • 1 Tbsp. margarine or butter
  • 1/8 tsp. dried tarragon

Instructions

  1. Arrange potatoes and broccoli around the edge of a 9-inch plate; sprinkle with water.
  2. Cover with vented plastic wrap and microwave on High (100%) until hot, about 2 to 2 1/2 minutes.
  3. Place the fish fillet in the center of the plate.
  4. Cover with vented plastic wrap and microwave until the fish flakes easily with a fork, about 2 1/2 to 3 minutes; drain excess liquid.
  5. In a small dish, combine margarine, lemon juice, and tarragon.
  6. Microwave uncovered on High (100%) until the margarine is melted, about 30 to 40 seconds.
  7. Spoon the lemon-tarragon butter over the fish and vegetables before serving.
