Ingredients

  • 4 to 5 lb. corned beef
  • 1 clove garlic
  • 1 bay leaf
  • 15 oz. can beef broth
  • 2 potatoes
  • 3 carrots
  • 2 onions
  • 1 cabbage

Instructions

  1. Combine the corned beef, garlic, bay leaf, and beef broth in a covered oven-safe pot or dish.
  2. Cook in a 300°F (150°C) oven for 2 to 2 1/2 hours until the beef is tender.
  3. Remove the cover and add the quartered potatoes, carrots, and onions.
  4. Cover again and continue cooking for approximately 1 hour or until the vegetables are tender.
  5. Add the cabbage wedges during the last 15-20 minutes of cooking to allow them to soften.
  6. Serve hot, slicing the corned beef and arranging the vegetables alongside.
