Ingredients

  • 3 to 4 lb. chicken, skin removed
  • 2 tsp. salt
  • 1 small can mushrooms
  • 1 small bell pepper
  • 1 medium onion, chopped
  • 1 small jar pimento
  • 1 cup celery, chopped
  • 1 tsp. Worcestershire sauce
  • 1 tsp. Tabasco sauce
  • salt and pepper to taste

Instructions

  1. Put the chicken in a Dutch oven, add salt, and cover with water. Cook until tender. Cool and remove from bone.
  2. Add the chopped onion, celery, mushrooms, bell pepper, pimento, Worcestershire sauce, Tabasco sauce, salt, and pepper to the pot. Simmer for 20 minutes.
  3. Add the cooked spaghetti and cook until tender.
  4. Remove from heat and stir in half of the grated Mozzarella cheese, mixing very lightly.
  5. Add more water if needed to adjust the consistency.
  6. Top with the remaining cheese and bake at 350°F until the cheese melts and is bubbly.

Tips & Substitutions

For a richer flavor, consider searing the chicken before boiling it. You can substitute the pimento with roasted red peppers if desired. If you prefer a spicier kick, adjust the Tabasco sauce to your taste. To save time, use rotisserie chicken instead of boiling raw chicken. This recipe can also be made gluten-free by using gluten-free spaghetti.

Serving Suggestions

Serve this Chicken Spaghetti Dinner with a fresh garden salad or garlic bread for a complete meal. It pairs beautifully with American recipes like Vegetable And Chicken Pot Pie. For a heartier dish, consider adding some steamed vegetables on the side. Leftover spaghetti can also be repurposed in a baked casserole for a different twist.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a skillet over medium heat, adding a splash of water or broth to prevent drying out. Stir occasionally until heated through. Alternatively, you can microwave in a covered dish, stirring halfway for even heating.
