Ingredients

  • 1/3 cup butter or margarine
  • 1/4 cup lemon juice
  • 2 teaspoons granulated chicken bouillon mix
  • 1 teaspoon Tabasco sauce
  • 1 cup cooked rice
  • 1 package frozen spinach, thawed
  • 1 cup shredded sharp Cheddar cheese
  • 8 fish fillets (about 2 lb.)
  • paprika

Instructions

  1. Preheat oven to 375°F.
  2. Melt butter in a small saucepan.
  3. Add lemon juice, chicken bouillon, and Tabasco sauce to the melted butter.
  4. Heat the sauce slowly and set aside.
  5. In a medium bowl, combine cooked rice, thawed spinach, shredded Cheddar cheese, and 1/4 cup of the lemon-butter sauce.
  6. Mix well to incorporate all ingredients.
  7. Divide the rice and spinach mixture equally among the fish fillets.
  8. Roll up each fillet and place seam-side down in a baking dish.
  9. Pour the remaining sauce over the fish roll-ups.
  10. Sprinkle with paprika.
  11. Bake for 25 minutes or until the fish flakes easily.
