Ingredients

  • 1 cup fine cracker crumbs
  • 1/3 stick melted oleo
  • 2 cups sweet onions, sliced thin
  • 2 tablespoons oleo
  • 2 eggs
  • 6 fish fillets
  • 2 tablespoons chicken stock
  • 1/4 cup grated cheese
  • 3/4 cup milk
  • 3/4 teaspoon salt

Instructions

  1. Make the crust by mixing cracker crumbs with melted oleo and press into an 8-inch pie plate.
  2. Saute sliced onions in oleo until lightly browned.
  3. Add chicken stock to the onions and stir.
  4. Spoon the onion mixture into the cracker crust.
  5. Place fish fillets over the onions.
  6. Beat eggs, milk, and seasonings together and pour over the fish.
  7. Sprinkle grated cheese on top.
  8. Bake at 350°F for 30 minutes or until a knife inserted in the center comes out clean.
  9. Let cool for 10 minutes before serving.
