Ingredients

  • 1 c. chopped onion
  • 1/2 c. chopped celery
  • 1 large clove garlic, crushed
  • 2 cans (16 oz.) tomatoes, cut up chunks
  • 1/2 c. dry white wine
  • 1/2 c. minced parsley
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. thyme
  • 1 pkg. (1 lb.) frozen fish fillets, thawed or partly thawed, cut in 1-inch chunks

Instructions

  1. In a large saucepan, sauté onion, celery, and garlic in margarine or butter until tender.
  2. Stir in tomatoes, white wine, parsley, salt, pepper, and thyme.
  3. Cover and simmer for 30 minutes.
  4. Add fish fillets and simmer for an additional 7 to 10 minutes or until fish is opaque and flakes easily with a fork.
