Ingredients

  • 2 (14.5 oz.) cans salsa with cilantro or other diced, stewed tomato product
  • 1 (15.5 oz.) can red kidney beans
  • 1 (14 to 15 oz.) can or 10 oz. package frozen okra
  • 1 envelope chili seasoning
  • 2 cups water
  • 1 (14 to 15 oz.) can or 10 oz. package frozen corn
  • 1 lb. cocktail or salad small shrimp
  • 2 cups uncooked rice

Instructions

  1. Combine salsa, beans, chili seasoning, and water in a crock-pot. Cook, covered, on high for 1 hour.
  2. Stir in the shrimp.
  3. Cook an additional 30 minutes, then add the okra.
  4. Cook for another 15 minutes, then add the corn.
  5. Cook for an additional 15 minutes, then add the rice.
  6. Stir thoroughly, turn off the crock-pot.
  7. Let stand for 10 minutes before serving.
  8. Keep the lid on the crock-pot throughout cooking and after adding the rice.
