Ingredients

  • 1 lb. extra firm tofu
  • 1 small onion
  • 1 can pasta ready tomatoes - 3 cheese
  • 1/4 cup dry red wine
  • dash of chili pepper to taste
  • dash of marjoram to taste
  • dash of oregano to taste
  • dash of black pepper to taste
  • 1/4 cup wheat germ
  • 8 oz. mushrooms, sliced
  • 1 tablespoon olive oil

Instructions

  1. Cut the tofu into 1/2-inch thick slices and allow to dry on paper towels.
  2. Start to cook brown rice according to package instructions.
  3. In a large saute pan, sauté onions in olive oil until translucent.
  4. Add sliced mushrooms, red wine, and spices; cook until mushrooms are soft.
  5. Coat tofu with wheat germ by placing wheat germ in a shallow dish and gently pressing tofu slices into it.
  6. Add the coated tofu to the saute pan, moving vegetables aside to place tofu directly on the pan surface.
  7. Pour the can of ready tomatoes over everything and gently mix the vegetables and tofu into the tomatoes.
  8. Cover and cook on medium heat for 7 minutes.
  9. Serve the tofu and vegetable mixture over the cooked brown rice.
