Ingredients

  • 2 lb. yellow squash
  • 1/4 c. margarine
  • 1/2 c. chopped onion
  • 1/4 c. chopped pecans
  • 1 egg
  • 3 Tbsp. dry breadcrumbs
  • 1/2 c. mayonnaise
  • 1/3 c. chopped green pepper
  • 1/2 c. grated cheese
  • 1/4 c. pimientos
  • pecan halves

Instructions

  1. Cook squash in a small amount of water until tender; drain.
  2. Add margarine and mash.
  3. Combine chopped onion, chopped pecans, beaten egg, dry breadcrumbs, mayonnaise, chopped green pepper, grated cheese, and chopped pimientos.
  4. Add the mixture to the mashed squash.
  5. Pour into a 1 1/2-quart buttered casserole.
  6. Top with breadcrumbs and dot with margarine.
  7. Garnish with pecan halves.
  8. Bake at 350°F for 35 to 40 minutes.
