Ingredients

  • 3/4 cup quick brown rice
  • 5 large green peppers
  • 1 large onion
  • 1 pound ground lean chuck
  • 2 to 3 strips bacon
  • 2 1/2 cups canned tomatoes
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Cook the rice in boiling water for 15 minutes.
  2. Cut a thin slice from the top of each green pepper and remove the seeds.
  3. Drop the peppers into boiling water for 3 minutes, then drain and set upright in a baking dish.
  4. Mix half the onions, all the ground beef, and half the canned tomatoes.
  5. Add salt, pepper, and seasoned salt to the mixture.
  6. Stir in beaten eggs and cooked rice, then pile the mixture into the peppers.
  7. Top each pepper with a piece of bacon.
  8. Pour the remaining tomatoes and chopped onions into the dish around the peppers.
  9. Cover the casserole and bake in a hot oven at 400°F for about 45 minutes.
  10. Uncover and bake for an additional 15 minutes to brown the top.
