Ingredients

  • 3 lb. potatoes
  • 1/4 c. finely chopped onion
  • 1/4 c. margarine
  • 12 oz. carton small curd cottage cheese
  • 1/4 c. snipped parsley
  • 1 tsp. salt

Instructions

  1. Cook, peel, and mash the potatoes.
  2. In a saucepan, cook onion in 1/4 cup margarine until tender, but not brown.
  3. Stir onion, cottage cheese, parsley, and salt into the mashed potatoes.
  4. Spoon the potato mixture into a well-greased 2-quart casserole.
  5. Drizzle melted margarine over the top, if desired.
  6. Bake at 350°F until heated through and browned, about 30 minutes.
  7. Garnish with additional snipped parsley, if desired.
