Ingredients

  • 3 egg whites
  • 20 Ritz crackers
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1/2 cup chopped pecans
  • 1/2 pint whipping cream

Instructions

  1. Beat egg whites until stiff.
  2. Fold in sugar and baking powder.
  3. Add broken up Ritz crackers, grated fine.
  4. Add vanilla and chopped pecans.
  5. Pour mixture into a greased and floured 9-inch pie plate.
  6. Bake in a 350°F oven for 20-25 minutes.
  7. Allow the pie to cool.
  8. Whip the cream until stiff.
  9. Add sugar and vanilla to the whipped cream.
  10. Spread the whipped cream on the cooled pie.
  11. Sprinkle with coconut.
  12. Refrigerate for 1-2 hours before serving.
