Ingredients

  • 3 (46 oz.) cans chicken broth
  • cooked, shredded white meat from 1 large chicken
  • 5 ribs celery, finely chopped
  • 2 lb. frozen spinach, thawed and chopped
  • 2 eggs
  • 1 cup Parmesan cheese
  • 1 bunch chopped parsley

Instructions

  1. Put chicken broth, shredded chicken, chopped celery, and parsley in a large soup pot and cook for 30 minutes.
  2. Mix thawed chopped spinach, eggs, and Parmesan cheese together.
  3. Drop spoonfuls of the spinach mixture into boiling soup.
  4. Cook for an additional 15 minutes.
