Ingredients

  • 1 lb. lean beef stew meat
  • 6 c. water
  • 1 (28 oz.) can tomatoes with liquid, cut up
  • 1 beef bouillon cube
  • 1 medium onion, chopped
  • 2 Tbsp. minced dried parsley
  • 2 1/2 tsp. salt
  • 1 1/2 tsp. ground thyme
  • 1/2 tsp. pepper
  • 1 medium zucchini, thinly sliced
  • 2 c. finely chopped cabbage
  • 1 (16 oz.) can garbanzo beans, drained
  • 1 c. uncooked small elbow or shell macaroni

Instructions

  1. In a slow cooker, combine beef, water, tomatoes with liquid, bouillon cube, chopped onion, dried parsley, salt, thyme, and pepper.
  2. Cover and cook on low for 7 to 9 hours or until meat is tender.
  3. Add sliced zucchini, chopped cabbage, drained garbanzo beans, and uncooked macaroni to the slow cooker.
  4. Cook on high, covered, for an additional 30 to 45 minutes or until the vegetables are tender.
  5. Serve hot, sprinkled with Parmesan cheese if desired.
