Ingredients
- 1 lb. lean beef stew meat ⓘ
- 6 c. water ⓘ
- 1 (28 oz.) can tomatoes with liquid, cut up ⓘ
- 1 beef bouillon cube ⓘ
- 1 medium onion, chopped ⓘ
- 2 Tbsp. minced dried parsley ⓘ
- 2 1/2 tsp. salt ⓘ
- 1 1/2 tsp. ground thyme ⓘ
- 1/2 tsp. pepper
- 1 medium zucchini, thinly sliced
- 2 c. finely chopped cabbage ⓘ
- 1 (16 oz.) can garbanzo beans, drained ⓘ
- 1 c. uncooked small elbow or shell macaroni ⓘ
Instructions
- In a slow cooker, combine beef, water, tomatoes with liquid, bouillon cube, chopped onion, dried parsley, salt, thyme, and pepper.
- Cover and cook on low for 7 to 9 hours or until meat is tender.
- Add sliced zucchini, chopped cabbage, drained garbanzo beans, and uncooked macaroni to the slow cooker.
- Cook on high, covered, for an additional 30 to 45 minutes or until the vegetables are tender.
- Serve hot, sprinkled with Parmesan cheese if desired.
