- Brown the lamb in butter; remove the meat and set aside.
- Add chopped onion to the remaining fat and cook until browned.
- Stir in flour and cook until a deep brown color, stirring continuously.
- Combine the onion and flour mixture with the browned lamb in a 4 pint casserole dish.
- Pour hot water over the mixture and stir in saffron, cinnamon, salt, and pepper.
- Bake in a preheated oven at 325°F (160°C) for 2 hours until the meat is tender.
- Soak the prunes in cold water for 1 to 2 hours, then add to the casserole.
- Continue cooking for another hour, then add grated orange rind and sugar.
- Serve hot, garnished as desired.
