Ingredients

  • 3 lb. lean lamb
  • 2 1/2 oz. butter
  • 1 large onion, finely chopped
  • 2 Tbsp. flour
  • 2 Tbsp. water
  • 1/4 to 1/2 tsp. saffron
  • 1 small stick cinnamon
  • 1 Tbsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. sugar
  • 1 Tbsp. grated orange rind
  • 1/2 lb. large prunes

Instructions

  1. Brown the lamb in butter; remove the meat and set aside.
  2. Add chopped onion to the remaining fat and cook until browned.
  3. Stir in flour and cook until a deep brown color, stirring continuously.
  4. Combine the onion and flour mixture with the browned lamb in a 4 pint casserole dish.
  5. Pour hot water over the mixture and stir in saffron, cinnamon, salt, and pepper.
  6. Bake in a preheated oven at 325°F (160°C) for 2 hours until the meat is tender.
  7. Soak the prunes in cold water for 1 to 2 hours, then add to the casserole.
  8. Continue cooking for another hour, then add grated orange rind and sugar.
  9. Serve hot, garnished as desired.
