Ingredients

  • 1 c. flour
  • 1 stick butter
  • 1 c. pecans
  • 1 (8 oz.) pkg. cream cheese
  • 1 c. powdered sugar
  • 1 (8 oz.) carton Cool Whip
  • 2 (3 oz.) pkg. instant lemon pudding
  • 3 c. milk

Instructions

  1. Combine 1 cup of flour, 1 stick of butter, and 1 cup of chopped pecans to make the crust layer. Press into the bottom of a dish and refrigerate until set.
  2. Mix the instant lemon pudding with 3 cups of milk according to package instructions until thickened.
  3. Spread the cooled pudding over the crust layer.
  4. Beat the cream cheese and powdered sugar until smooth, then fold in the Cool Whip.
  5. Spread this cream cheese mixture over the lemon pudding layer.
  6. Chop the remaining pecans and sprinkle over the top as a final garnish.
  7. Refrigerate for at least 2 hours before serving to allow layers to set.
