- Wash, trim, and quarter the vegetables.
- Put vegetables through a food grinder using a coarse blade; drain, discarding the liquid.
- Combine vinegar and remaining ingredients in a large saucepan; heat to boiling.
- Add vegetables to the saucepan; simmer for 5 minutes, stirring occasionally.
- Quickly pack the hot vegetables into clean, hot jars, filling to within 1/2 inch of the top and ensuring the vinegar solution covers the vegetables.
- Cap each jar immediately and process in boiling water bath for 5 minutes.
