Four Vegetable Relish

A vibrant, tangy relish combining the crunch of green peppers, cabbage, onions, and carrots, perfect for adding zest to sandwiches, burgers, or served as a side. Suitable for summer picnics and family gatherings.

Ingredients

  • 2 1/2 lb. green peppers
  • 1 small head cabbage
  • 1 lb. onions
  • 1 lb. carrots
  • 2 3/4 cups Heinz distilled white vinegar
  • 3/4 cup water
  • 1 1/2 cups granulated sugar
  • 3 Tbsp. salt
  • 1 Tbsp. mustard seed

Instructions

  1. Wash, trim, and quarter the vegetables.
  2. Put vegetables through a food grinder using a coarse blade; drain, discarding the liquid.
  3. Combine vinegar and remaining ingredients in a large saucepan; heat to boiling.
  4. Add vegetables to the saucepan; simmer for 5 minutes, stirring occasionally.
  5. Quickly pack the hot vegetables into clean, hot jars, filling to within 1/2 inch of the top and ensuring the vinegar solution covers the vegetables.
  6. Cap each jar immediately and process in boiling water bath for 5 minutes.
